The Botanist is the ultimate luxury (re)treat. Located within the renowned Fairmont Pacific Rim hotel in Vancouver, B.C., this farm to table brasserie has a dedicated mixology bar ensconced in rarefied slate concrete. Capturing the essence of this restaurant remains one of my favorite projects to date.
